   Tortilla Omelette Egg Recipe
Here's a simple recipe for a Tortilla Omelette
- 4 large eggs
- 2 medium-sized potatoes, peeled and thinly sliced
- 1 small onion, finely chopped
- 1/2 red bell pepper, finely chopped optional
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Fresh parsley or chives, chopped (for garnish, optional
1. In a large mixing bowl, crack the eggs and beat them well. Season with salt and black pepper to taste. Set aside.
2. Heat olive oil in a non-stick skillet over medium heat. Add the sliced potatoes and cook until they are golden brown and cooked through, about 8-10 minutes. Stir occasionally to ensure even cooking.
3. Once the potatoes are cooked, add the chopped onion and red bell pepper (if using) to the skillet. Cook for another 2-3 minutes until the vegetables are softened.
4. Pour the beaten eggs evenly over the cooked potatoes and vegetables in the skillet. Using a spatula, gently lift the edges of the omelette to allow the uncooked eggs to flow underneath.
5. Continue cooking the omelette until the eggs are set and the bottom is golden brown, about 5-7 minutes.
6. Carefully flip the omelette using a large plate or lid to cover the skillet. Slide the omelette back into the skillet to cook the other side for another 3-4 minutes, or until cooked through.
7. Once the tortilla omelette is cooked to your liking, transfer it to a serving plate. Garnish with fresh parsley or chives if desired.
8. Slice the omelette into wedges and serve hot or at room temperature as desired.
