Chicken Fried Rice recipe

 1 cup boneless chicken (cut into small pieces)

- 2 cups cooked and cooled rice

- 2 eggs (beaten)

- 1 onion (chopped)

- 1 tomato (chopped)

- 2 green chilies (finely chopped)

- 4 cloves of garlic (minced)

- Salt to taste

- 1 teaspoon black pepper powder

- 2 tablespoons soy sauce

- 1 tablespoon vinegar

- 1 cup chicken stock

- 2 tablespoons chopped spring onions (green part)

- 3 tablespoons oil

Instructions

1. Heat oil in a pan and sauté onions, green chilies, and garlic until fragrant.
2. Add chicken pieces and stir-fry for 3-4 minutes until cooked through.
3. Now, add tomatoes, salt, black pepper powder, soy sauce, vinegar, and chopped spring onions. Mix well.
4. Add cooked rice and beaten eggs to the pan. Gently stir to combine everything evenly.
5. Pour in chicken stock and stir continuously until the rice absorbs all the flavors and the mixture is heated through.
6. Chicken fried rice is ready! Serve hot and garnish with extra chopped spring onions if desired.
