Namkeen Gosht Recipe

Here's a recipe for Namkeen Gosht, a savory and flavorful dish:

- 500 grams mutton or beef, cut into bite-sized pieces
- 2 onions, finely sliced
- 2 tomatoes, chopped
- 4-5 green chilies, slit lengthwise
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala powder
- Salt to taste
- 1/4 cup vegetable oil
- Fresh coriander leaves for garnish

1. Heat vegetable oil in a heavy-bottomed pan or pressure cooker over medium heat.

2. Add sliced onions and fry until they turn golden brown.

3. Add ginger paste and garlic paste, and sauté for a couple of minutes until the raw smell disappears.

4. Add cumin seeds and coriander seeds, and fry for another minute until fragrant.

5. Now, add the mutton or beef pieces to the pan and cook until they are browned on all sides.

6. Add chopped tomatoes, green chilies, red chili powder, turmeric powder, garam masala powder, and salt to taste. Mix well to combine.

7. Cook the meat with the spices for a few minutes until the tomatoes soften and release their juices.

8. If using a pressure cooker, add about 1 cup of water, close the lid, and cook until the meat is tender (usually takes about 20-25 minutes after the pressure builds up). If cooking in a regular pan, cover and simmer until the meat is tender, adding water as needed.

9. Once the meat is cooked and the gravy has thickened to your desired consistency, remove from heat.

10. Garnish with fresh coriander leaves and serve hot with naan or rice.
